What I make and eat #11

Thanksgiving Edition.

Remembering that we in Canada celebrate out Thanksgiving in October. Last night I made this for our dinner -

Puff Pastry filled with a mixture of grated Smoked Tofu, roughly chopped Mixed Nuts, dried Cranberries, Breadcrumbs, Panko, Sofrito, and Herbs/Spices. No recipe, just until I liked the taste, baked at 400F for about 15 minutes.

Oven Roasted Brussels Sprouts.

Pan Roasted Maple Glazed Sweet Potato Cubes with dried Cranberries.

Mashed Potatoes and Marmite Gravy (not pictured).

Full and happy tummy!

Oh, wow Carla... THAT'S BEAUTIFUL. Sounds so yummy. How'd you do the special design on the top?

I'm new to eating vegan; what is "sofrito"? Did you mix that and the panko to get the flaky crust?

I'd love to serve this for my American Thanksgiving - mmmmmm! :g

I just rolled the pastry (store bought vegan puff pastry) to a large rectangle, placed the filling in the middle, then sliced the sides and folded to look like it was braided.
Sofrito is a Latin food mixture of cooked down onion and peppers -- I based mine on the recipe in Viva Vegan! (by Terry Hope Romero)and I had some leftover which is why I just mixed it in.
There is no real recipe, I just played around with it!

That looks awesome. I'm kind of a recipe girl though...afraid to try things without very specific instructions. This looks worth trying though for sure.
