Just around the corner. This is an Individual Simnel cake from Vegan Bake Sale - a fruit cake yes, but not super heavy, and with homemade marzipan on top, also a layer of the marzipan in the middle of the cake.
I just pulled two batches of hot cross buns out of the oven. The crosses were too runny and didn't work so well, but the buns are so delicious! Thanks so much for your awesome cookbook!
Hooray!! As for the crosses, add a little more cornstarch if this happens again, it may be that your humidity affected it a little. Your humidity will always be more than mine!
