Pie, and Beans, and Chips

As the title says - this was dinner last night. Left over "Meaty Pie" made with TVP, baked beans and oven fries. Not the best health wise (not a green vegetable to be seen) but high on the comfort scale!

Impromptu and Unsolicited, Part 2

Store Review. Sort of.

I'm very lucky to live walking distance, if you count half an hour walking as walking distance, I do, so its walking distance for me, away from the Karmavore Store in New Westminster. Its a vegan speciality store stocked to the roof with all sorts of yummy foods, even refrigerated and frozen stuff, shoes, belts, t-shirts and hoodies, pet stuff, and books. Take a browse through the online store, yes you can order from far away, as what you see there is what they have in store!

I don't know the names of the people who work there, but every time I've been in they have been helpful and friendly, and happy to have a chat with you, dispose of your unwanted packaging and what have you.

They even have a blog.

I have no connection with the store, and they haven't asked me to write this, I'm just sharing! and this reminds me, I'd better go introduce myself and see if they want to stock my book once it is published!! HA!

Impromptu and Unsolicited, Part 1

Product Review. Of sorts.
I have been using these Sweet & Sara Mini Marshmallows (picture from their website) in some of the baking I've been doing lately, and they are great, just the right size for baking in stuff, and even if they are a little too big, so much easier to cut up than big sized marshmallows. They are sweet and marshmallow-y textured as you'd expect, so I have nothing but praise for the product.
R especially loves them, and as her friends often bring mini marshmallows as a treat snack for recess at school, she has been bugging me everyday to be allowed to take them too!
These treats are available from online vegan stores, and speciality stores, but here's the list from the S&S website! For me, the easiest place to buy them will be the subject of Impromptu and Solicited, Part 2! Next time.

A recipe!

Following on from the comment left last time by Sabrina on my post about the Savory Biscotti asking for the recipe, I'd like to say that I can't share that recipe at this point in time, because it is a potential recipe for the book. Until what is going in the book is finalised I'm not going to be sharing those recipes, but may int eh future, so keep watching this space!


It made me feel a little bad so I just had to whip something up I could share, and from what I had in the fridge, here is my lunch yesterday, complete with recipe!!

Quick and Easy Tofu with Olives and Basil
Serves 2 with Pasta

6oz Extra Firm Tofu, in ½” cubes

1 teaspoon Olive Oil
½ medium Onion, finely chopped, about ½ Cup

2 cloves Garlic, minced

½ teaspoon dried Oregano
½ teaspoon Paprika
Pinch Chili Flakes, to taste

2 Tablespoons Water
1 Tablespoon Ketchup

⅓ Cup sliced Black Olives

2 Tablespoons finely sliced fresh Basil

Salt and pepper to taste

In a medium Skillet over medium high heat dry sauté the tofu for about 10 minutes, turning about every 2 to 3 minutes, until most sides are golden brown. Remove from heat and hold on plate until required.
Using the same skillet, sauté the onion in the oil for about 5 minutes, until lightly browned. Add the garlic and sauté a minute more. Add in the spices, stir to combine, then add the water and ketchup and then sauté for another minute.
Stir in the olives and tofu cubes, sauté for maybe 2 minutes to ensure tofu is reheated, and stir in the basil leaves to wilt.
Serve tossed through pasta.

Happy Birthday Dear M.

You have to sing the title for it to make sense!

Here's the cake I made for her - Mini Vanilla Bean Cupcakes (recipe is in testing for the book) in the shape of a heart and iced as one big cake, like they do in the supermarket bakeries and as requested. This could double as a Valentines cake, its the right shape and colours!

What's for Dinner?

Yesterday, Risotto. Something else which is pretty quick and easy to make, with minimal clean up involved. Hooray for dishes like that. Everyone gets fed but I don't have to spend hours cooking to get it done.
Veggies - check, I included leeks, red pepper and peas this time, Grain - check, though not whole grain, Protein - no check, but lots of tofu eaten over the past few days so no lack there.
In the background some Dinner Biscuits. All in all a really nice dinner.
