I had some leftover Ganache from the Halloween Party I threw for the girls last week and finally decided to use it. 
I made these wonderful Cocoa Nib Ganache Truffles with it, basically ganache rolled into a ball and rolled in raw Cocoa Nibs. The bitter crunch of the raw chocolate contrasting really nicely with the smooth, creamy richness of the ganache. I gave them away to the girls teachers!

I'm a bit envious of your girls' teachers! How lucky to be given these as a special treat.
To tell the truth their teachers are a little over being given treats all the time! While I was testing for Bakesale they'd get soemthing most days!
