What did we do on holiday??

I hear you all ask. Well, we played mini golf,
played in the ocean,
and at the park,
and played more mini golf!
It was a great week away, and nice and relaxing too. We went to the same place last year, and will go again next - for more mini golf no doubt.

BACK!

Got back this afternoon after a wonderful week away! I have pictures to upload and will post but that may take a few days. I have MOUNTAINS of laundry to do first, and we have no food in the cupboards, and you know how it is when you get back from time away!!

Away for a bit.

Ginger Neville.

According to the Australia Woman's Weekly Kids Birthday Cake Book, that is the name of this cat, immortalised in cake.

R's friend M was having a birthday party and I offered to bake the cake as our gift. I gave her the book, and some options to choose from and this is the one she wanted. The base is a sheet cake made from multiple batches of the Golden Vanilla Cupcakes from Vegan Cupcakes Take over the World, iced pretty much as specified in the book. I just made it a girl cat, not a boy one with the addition of a big gold bow.
and, no, the birthday girl and her family aren't vegan, they just know good cake, and great icing skills when they see / taste it!

something.

Something DEEE- Licious that is. Dinner last night. Take a look at these. We have an Isa Tester from her to be titled weight-lossy, whole-foods, healthy-eating book, Summer Lovin' Curried Corn and Veggie Chowder (she chooses the names!!) served with the first recipe I've made from Bryant Terry's Vegan Soul Kitchen, Sweet Cornmeal - Coconut Butter Drop Biscuits. Not weight lossy or low fat, but yes on the whole foods!

I made them less sweet as we aren't keen on super sweet biscuits. Both were so very good.

Happy Birthday to YOOOOOOUUUU.

It was H's birthday on Saturday, so the girls and I made him this for breakfast in bed. Its the Lower Fat Banana Bread from Veganomicon, as requested by R, who ate more than H did I think.
For his birthday dinner he requested Enchiladas - that is my home made, thrown together not from a recipe and made up each time as I go along Enchiladas, nothing authentic about these. Topped with the last of the Mozzarella Cheezly. Super Yum.
We didn't do a cake until Sunday when his Mum and Dad came over. This is the Raspberry Chocolate Blackout Cake from Vegan with a Vengeance, but made in 3 small cake tins to get a huge looking cake. mmmmm.
All in all a Happy Birthday was had. The girls did a really cute birthday show with dancing and singing for H, as we weren't going to spend a lot of money this time and it was so well done and they loved making it up and practising for it. Very cute.

and on a side note, Grandma and Grandpa took M to have a sleepover with her older cousin H at their house last night. She comes back this afternoon so I hope it all went well.

Look at this one!


Isn't that the most vibrant orange!!! and it tastes out of this world good too.

Its the Fresh Papaya and Lime Sorbet, a Terry / Vegan Latina Tester.

In the picture its just out of the ice cream machine so is still a little soft, but I can tell you it firms up nicely in the freezer, without ever getting too hard or icy. Perfect for summer days!!

Product stuff.

In the course of testing for Terry's Vegan Latina book I have been involved in a couple of product swaps, were I have sent (or been on the receiving end of) products that were unavailable elsewhere in return for vegan goodies from far away. The lovely Liz from Cooking the Vegan Books in the UK is one person I swapped with and as part of the parcel I received from her I got 2 vegan cheeses. These guys -
The Mozzarella Cheezly really melts! I had it on pizza a while back and it is great! and the Smoked Cheddar Sheese is good enough to eat! no, really - by itself, or as a cheese sandwich. I mean, of course, that it tastes remarkably good and cheese like, which vegan cheeses often don't. I was amazed, and am making them last as best I can.

I was so overjoyed to get these! Now, if you can find them here, they sell for up to $10 each for a little packet, so how jealous was I to see she bought them for a few quid each!! (Sue, or Iain and Nicole, - you reading this?? you know what to send for Christmas, or bring to Fi's wedding)

Never having met Liz, the only way I know she is lovely is due to the goodies she sent me!! Liz, if you're reading this, THANKS and those Hula Hoops didn't last long once the children got at them!

Sleepover Party.

M went to a Sleepover Party for her friends 7th birthday on Saturday night!

There were 8 girls at the party and 7 of them slept over. Are those parents crazy or what?!?!

What makes this feat of parenting wonder even more amazing is that the birthday girl's mother is 8 months pregnant!! with her third child! I suppose it was now or never, but still, that is pretty incredible.

So a big thanks for the party, M had an absolute blast and when I was putting her to bed Sunday night she was in tears because she wanted it to be "yesterday again".

To (start to) even up the testing posts.

Seeing as Isa is putting up recipes for her next book I thought I'd better take a photo and blog about that too, seeing as I seem to be showing a lot of Terry testers. Here we have - Scarlet Barley and Mushroom and Cannelini Paprikas. I'm sure you can guess from the colour which one is which!

It has been un summery here the last few days (and yes, 2 weeks ago it was sweltering so you do need to be careful what you wish for) so the warm, earthy delights of these dishes made a great lunch.

A couple of Quinoa pictures for you.

Testing pictures that is - Vegan Latina is still going strong. We have -
Roasted Sweet and Nutty Stuffed Plantains and Pan Fried Spicy Quinoa & Beans (aka tacu tacu) and
Quinoa Corn "Chowder" with Limas and Ajii
I've also made a lovely "quinoto" - Qunioa and Oyster Mushroom Risotto, but have no pictures of that one. Didn't look great, but tasted wonderful!!


Apologies for missing a few days. I'm still testing for Terry, and Isa is starting to post more recipes for testing for her next book, so I'm getting a few of them in too.
