M went on a 2 night sleepover Sparks camp this weekend (my big girl!!) and got a lift both ways with her friend M whose Mum drove. She (that is the mum) wouldn't accept any money for petrol, and as it was quite a long trip I offered a cake in payment instead. She jumped at the chance of that!
I gave her the choice of one of the following -
1. Raspberry Blackout Cake (Vegan with a Vengeance)
2. Coconut Lemon Bundt Cake (Veganomicon)
3. Smlove Pie (Veganomicon)
4. East Coast Coffee Cake - Apricot and Cardamon Variation (Vegan Brunch)
She's pregnant at the moment so her choice was determined by cravings! I made the winner and delivered it to much acclaim. Here we have the -
Coconut Lemon Bundt Cake
(from pg 256, Veganomicon) in all its glory. I lightly glazed it and topped with a tinsy sprinkling of coconut.

Have you ever tried it before? I have looked at that recipe *so* many times, but I am nervous it won't turn out well, for some reason...is it any good?

Courtney - I had some of the batter but I've never had the cake! Actually, Andrea called today to say it was just divine and next time she wants / needs a cake for something she'll happily pay me to make it again! So a good review there.
