End of Grade 1.

Another end of school year party, more cookies to share. This time for M's class, and with a recipe, as its one of mine! All enjoyed and gone! M's teacher is moving to a new school next year, and will be greatly missed - lots of tears on the last day. Enough of that, here's the cookies -
Chocolate Chip Cookies
Makes 25 large, soft and cakey cookies

½ C Sugar
¼ C Agave
¼ C Maple Syrup
½ C Canola Oil
½ C Almond Milk
2 T ground Flaxseeds
½ t Vanilla Extract
½ t Caramel Extract
1 ½ C Plain Flour
1 C Wholewheat Pastry Flour
1 ½ t Baking Powder
½ t Salt
½ t Cinnamon
1 C Chocolate Chips

In a large mixing bowl, whisk together the sugar, agave, maple syrup, oil, milk, flaxseeds and extracts until smooth. Stand 10 minutes.
Sift in the flour, baking powder, salt and cinnamon. Mix until combined. Fold in the chocolate chips. Place in fridge for 25 – 30 minutes to firm up a little.
Preheat oven to 350F and line baking trays with parchment paper.
With slightly damp hands, roll dough into golf ball sized balls, and place 2” apart on the baking sheet. Flatten with your fingers.
Bake for 10 minutes until the bottoms are a little browned. Cool 5 minutes on the tray before transferring to a rack to complete cooling.
