Using up some of that POM Wonderful Juice as posted about the other day!
and bringing muffins back to this blog, where they belong!
Makes 12
1 C Plain Flour
½ C Whole Wheat Pastry Flour
½ C Ground Almonds
2½ t Baking Powder
1 t Baking Soda
½ t Cinnamon
½ t Salt
½ C + 1 T Soy Milk
¼ C Oil
½ C Pomegranate and Blueberry Juice
2 T Pomegranate Molasses
3 T Brown Sugar (packed)
3 T Sugar
1 C fresh or Frozen Blueberries
Preheat oven to 375F and prepare muffin tins.
In a large bowl whisk together flour, ground almonds, baking powder and soda, cinnamon and salt.
In another bowl mix together the milk, oil, juice, molasses and sugar.
Add the liquid ingredients to the dry and mix to just combine. Fold in the berries.
Spoon mix into tins and bake for 20 - 25 minutes or until tests done.
Cool muffins in tins for 5 minutes and then on rack.
