Rice with Pigeon Peas (Arroz con Gandules) is a simple, easy to prepare dish which tastes wonderful. It cooks in the oven so you can pop it in, forget it and come back to a great dinner - with or without anything on the side.
Pigeon peas where new to me, and I like them. A little earthy tasting they are great beans, and I have a bunch in the freezer to use up. I've made this dish (and variations thereof) about 3 times already!
