As part of my testing I did some baking with Spelt Flour. Yay, baked goods! First up here's a PPK tester recipe - Spelt Chive Biscuits, which I served with the Corn Chowder from VWAV. Yum.
Then there's one of mine - Spiced Date Spelt Muffins. Super Yum. R loved them too.
Makes 12
1 C Almond Milk
1 t Apple Cider Vinegar
2 ¼ C Spelt Flour
2 t Baking Powder
1 t Baking Soda
½ t Salt
1 t Cinnamon
½ t Nutmeg
¼ t Cloves
¼ t Allspice
2/3 C Dates – finely chopped
¼ C Brown Sugar
½ t Vanilla
2 T Maple Syrup
2 T Oil
6 seeded Dates – halved
Preheat oven to 375F and prepare muffin tins.
In a medium bowl combine the almond milk and ACV. Stand for 5 minutes.
In a large bowl sift together the flour, baking powder / soda, salt and spices.
Add the chopped dates and toss to coat.
To the almond milk add the sugar, vanilla, maple syrup and oil, whisk well.
Pour the wet ingredients into the dry and stir to just combine.
Spoon mix into tins and top each one with ½ date.
Bake for 18 - 22 minutes until tests done, then cool in tray for 5 minutes before transferring to rack.
Anyhow. Thats an update. See you next time after I test wheat!

Yum--I *love* spelt! BUT, I am sorry to say, that spelt DOES in fact contain gluten. Sorry! Maybe that was the problem? It could be a gluten problem rather than a problem with the "non-gluten" grains...

Courtney, I may not have been 100% clear but I was testing Non WHEAT gluten grains, ie grains that have gluten which are not wheat, not non GLUTEN grains - if that makes sense? Carla
